Introduction

Australian lamb and mutton is a product of its environment. Australia’s vast pastures, clean rainfall and brilliant sunshine, coupled with advanced farm management, animal husbandry and meat processing techniques, have developed a sheep meat production unit that is second to none in the world.

Specifications

Carcase includes all parts of the body skeletal musculature and bone, extending to and including the hock joint (tarsus) and knee joint (carpus), all cervical vertebrae and up to five coccygeal vertebrae. Carcase trim must comply with all government hygiene regulations that passes a carcase fit for human consumption and with the Australian meat industry agreed minimum trim requirements.

Female castrate or entire male ovine that:

  • Has no eruption of permanent incisor teeth.
  • Milk Fed (MF) Lamb that has not been weaned. Younger than 8 weeks.
  • Grain Fed (GF) Lamb that meets the specifications and feed details as set out in the AUS-MEAT Language.
MUTTON * M *

Female or castrate male ovine that:

  • Has evidence of eruption of at least one permanent incisor tooth.
  • In males shows no SSC.
HOGGET * H *

YEARLING
MUTTON * H *

Female or castrate male ovine that:

  • Has evidence of eruption of one but no more than two permanent incisor teeth.
  • In males shows no SSC.
